Summer Nights + a Savory Dijon Pork Loin Filet Recipe

Though we were so ready to get out of Arizona last summer and move to our current duty station, there are a number of things we really (really really) miss about living out there.

The comfortably warm weather tops the list. Fort Huachuca sits at an elevation of 4,900 feet which keeps the tiny city significantly cooler than Phoenix and Tucson. Because there was no humidity and no bugs, we spent nearly every evening outside grilling dinner or sitting out front chatting with our neighbors after we put baby Hadley to bed. It was really nice, and we miss it!

Last week we got a multi-day stretch of cool(er) weather with highs that hovered between 75 and 80 degrees. For July in Kansas, that’s bananas! We were loving it. There are few things I love more than sitting out on our side patio with my husband on a comfortable night, eating dinner off the grill, and watching Hadley roam from toy to toy, so we took advantage of the weather a couple of nights and did just that.

One night I came home from shopping at Walmart with a package of Smithfield Marinated Garlic and Herb pork loin filet for my husband to grill, and he lit up like an absolute Christmas tree when he saw it while helping me unpack groceries! We rarely branch out from grilling chicken and different kinds of burgers, so he was pretty pumped when he saw the pork.

Because it was a weeknight and I wanted to get dinner going quickly before it got too late to feed Hadley, I threw together a recipe that was inspired by something I pinned on Pinterest a few weeks ago. Because the pork is already marinated, putting together this quick recipe was a cinch! Jamie prepped the grill to get ready for the pork, I whipped together some side items, and we enjoyed about an hour outside eating dinner and hanging out before Hadley’s bath time. 



The pork recipe I prepared was a savory dijon pork loin, and it was seriously Heaven on a plate! We’ll definitely be adding this to our weekly rotation through the end of the summer. It was that good!

After she went to bed, we went right back out to sit and talk some more. Sometimes he gets so caught up in his job and I get so caught up in my own agenda that we rarely take time to just sit outside and relax… just the two of us. It was nice! I love nights like this.


Dijon Pork Loin Recipe

What you’ll need

  • 1.5 lb Smithfield Marinated Garlic and Herb Pork
  • 2 tbsp steak seasoning (any kind of your choice)
  • 1 tbsp all-purpose flour
  • 1/8 cup butter, melted
  • 1 tsp dijon mustard

Directions

  • Combine ingredients in a bowl and rub mixture evenly over pork. Grill over medium heat for 35 minutes turning every 10 minutes.
