Oh, hi! 🙂
I have a short and sweet “Slice of Life” ready for ya, if you’d like a glimpse at what’s been going on in our neck of the woods lately.
I figure that more people will be searching Google and Pinterest for carrot cake recipes this month as Easter approaches (April 1st), and because the carrot cake cupcakes on this site are UNREAL, I wanted to make sure the photos were a bit better (since we often eat with our eyes first). This resulted in three times the wins: I was able to use up the shredded carrots in our fridge (because y’all know food waste KILLS ME), I scored some updated photos, and my family had dessert on hand for several days. Mmmm mmm MMMM.
If carrot cake is your thang, you’re going to love these! Pinky swear.
After I shared a photo of the cupcakes on Instagram, a girlfriend commented that she hoped I was catching up on The Bachelor and eating one right at that very moment. Was she spying on me?! Sure enough, that’s exactly what I was doing. 🙂 The girls were napping and I was putting up my IG post while finishing my afternoon snack and watching After The Final Rose (this specific friend knows I have to watch it a day late since we ditched cable).
Bachelor fans: Is it weird that I’m having way more fun following Arie and Lauren on Instagram now than I did while watching them on their season? It just goes to show that the way the producers edit the show really matters. Arie and Lauren have said many times that they don’t think they got a good “edit”, and I kind of agree with them! As far as Becca goes, I think she is going to be a killer bachelorette.

Twice last week Jamie came running into the room I was in to tell me that one of the girls had puked. I am actually laughing out loud as I type this because with Sadie he actually went into her room to check on her while he was brushing his teeth, and all of a sudden I see him running down the hallway towards our room and slams his foot in the doorframe. I pop up and am all WHAT THE HECK IS GOING ON. He’s trying to tell me that Sadie is barfing while he has a toothbrush in his mouth, and I have no idea what he’s saying.
I run into the bathroom after him yelling WHAT DID YOU SAY??? And he spits his toothpaste and yells that Sadie just upchucked all over her room. Good Lord in Heaven – that was a LONG NIGHT. Hadley didn’t catch the bug quite as bad. A few good upchucks and her belly was better. We taught her how to barf into a trash can, and let me tell ya – I have never been prouder than I was when I woke up to the sound of her barf splashing into the trash can. I know you are squirming right now thinking this is gross and SO UNNECESSARY ERICA, but when all you have to do is clean out a trash can instead of an entire bedroom, you’re a proud, proud parent.
All of this to say that popsicles are a good thing for sick bellies, but in our house, popsicles are only consumed in two places. If it’s warm, they’re eaten outside only. If it’s cold, they’re enjoyed in the bathtub right before bath time.
After a wild week, we decided we need a few hours to break away from reality and responsibilities and have some fun. We got in a good workout at 9Round, freshened up (eh….kind of), and then enjoyed a fabulous dinner on the patio at Taco Lucha. We dropped the kids off for dinner and some play time at our city’s drop-in daycare, so they had just as much fun as we did. 🙂 Sometimes you just have to take a break and treat yourself to your kind of fun, even if it’s only for a few hours. For us, fun looked like kickboxing, margaritas, and raspberry black bean dip.
Three or four times a day, the girls will grab their , place it in the same spot every time, and dance their hearts out to tunes from the soundtrack. You would think this would drive us crazy, but I CANNOT GET ENOUGH (Jamie is a different story…but he bought it for them, sooooo sorry dude.) Watching their goofy dance moves and seeing how they egg each other on makes me so happy. Can’t recommend this “toy” enough. It’s been a crowd favorite since November.
And finally…
We are under contract. Again. 😉 We’ve been under contract for two weeks, but we stayed quiet until the inspection process and repairs were done. We’re on track to close on our KS house soon and then close on our AL house either later the same day or the next day. The last few months have been absolutely insane, but we know these buyers are getting an incredible house and hope they love it as much as we do!
Hope your week has been off to a great start and that temperatures are starting to warm up near you! We’ve been able to venture out without heavy coats a good chunk of the last couple weeks, which feels incredible after a brutal winter. Here’s to more sunshine for all of us this week, literally and figuratively. <3
