Crowd-Pleasing Two-Layer Carrot Cake

Ingredients
  • Cake:
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 scant cup of vegetable oil
  • 4 eggs
  • 3 cups finely grated carrots (we put ours in a food processor for a few seconds)
  • Frosting:
  • 1 8oz. package cream cheese
  • 1 stick softened butter
  • 4 cups powdered sugar
  • 1 cup chopped pecans
  • 2 tsp vanilla
Instructions
  1. Cake:
  2. Preheat oven to 350 degrees.
  3. Mix together dry ingredients.
  4. Add oil.
  5. Add eggs one at a time, stirring well between each.
  6. Add carrots.
  7. Divide mixture between two greased round cake pans and bake for 35 minutes.
  8. Frosting:
  9. Cream butter and cream cheese together.
  10. Sift powdered sugar into creamed mixture.
  11. Add vanilla and chopped pecans.
  12. If too dry, add 2 tsp milk (You want the icing to be pretty firm, so only add milk if not spreadable.)
  13. Allow cake to cool entirely before icing. Enjoy immensely!
